Lemon Olive Oil Potatoes

One of Greece's most beloved side dishes.

Potatoes, lemon, oregano, and olive oil become deeply fragrant when roasted together.

Ingredients

  • Potatoes
  • Greek olive oil
  • Lemon juice
  • Oregano
  • Sea salt

Instructions

  1. Cut potatoes into wedges and season with salt and oregano.
  2. Add olive oil, lemon juice, and a little water.
  3. Roast until tender inside and golden at the edges.
